Recipe for cherry and raspberry jam for the winter

Rinse the berries under running water and pat dry on a paper towel. Remove pits from cherries. To do this, you can use a regular hairpin or pin - the berries will remain almost intact.

You should also be careful not to allow the ingress of wormy fruits, as well as those tainted with rot. If the raspberries are a little suppressed, then it is better not to rinse them with water, removing the necessary juice, but simply grind them in puree using a blender - this will give the necessary thickness to the jam.

Sprinkle the prepared cherries with sugar and leave for 10-15 minutes, so that the berries let the juice a little. This is an optional step - if time is running out, then you can immediately put it on the stove, but you will have to stir the contents of the pan more often so that the sweet mass does not burn to the bottom.

For the first 5-10 minutes, cook the berries over high heat, they should boil well, and the sugar should completely dissolve. Be sure to remove the foam formed in the process. Next, make the fire below average and boil the mass, stir periodically for 15-20 minutes, and then send the raspberries there, mix gently so as not to crush the berries, and continue the cooking process for the same amount of time. While still boiling, pour the finished jam into previously sterilized jars and roll up the lids, and it does not matter: they are screw or turnkey. Turn upside down and wrap with a blanket overnight, then move to permanent storage.

Gelatin recipe

If you prefer thick types of jam, then the sweet mass can be made denser with gelatin. For this, the following proportions are used:

  • 0.5 kg of cherries and raspberries;
  • 1 kg of sugar;
  • 2-3 tbsp. l. gelatin.

First of all, sugar and gelatin are mixed (you do not need to soak it in water beforehand), and then they are combined with pitted cherries. The mass is boiled over high heat until the sugar is completely dissolved, then raspberries are added. Continue heat treatment of the jam over medium heat for another 10 minutes, and then pour hot into the jars prepared in advance. After cooling, the aromatic delicacy becomes thick, almost like jelly.

Terms and conditions of storage

If the jam is cooked and rolled correctly and does not contain seeds, it can be stored for up to 5 years in a cool place. For this, a cellar or pantry is usually used, in which the temperature does not exceed +15 degrees. It is important that the room is dry and periodically ventilated.

It is recommended to inspect the jars once every 1-2 months: if there are signs of swelling of the lid or oxidation, such jam should be used immediately, but better not as a usual dessert, but, for example, for baking pie or muffins. It makes no sense to store ready-made jam rolled up in the refrigerator, except perhaps in an open jar, the product from which was not eaten immediately. Over time, the taste of cherry and raspberry jam does not change.
