Korean style lightly salted cucumbers are an excellent appetizer for spicy lovers. Such a dish will never be superfluous on the table, it goes well with second courses and just as an appetizer. The cooking recipe is very simple and will not take much of your time. In addition, they can be rolled up for the winter, and believe me, they will help you out more than once. There are many cooking options, for example: with meat, carrots, soy sauce, sesame seeds. There is a recipe for every taste. The most popular is the classic version of Korean cucumbers and carrots. Consider two simple recipes for making such cucumbers.
The classic version of cooking cucumbers in Korean
You will need the following ingredients:
- 1.5 kg of fresh cucumbers;
- half a pack of Korean carrot seasoning;
- 100 g sugar;
- 50 g of salt;
- half a glass of 9% vinegar;
- half a head of garlic.
Advice! Ordinary ground cucumbers are best for this recipe, but salad varieties will not turn out so crispy.
Small pimpled fruits, even in appearance, will look much more spectacular. They should be washed under running water and rubbed with a soft brush. Next, we cut the cucumbers, first into 4 slices in length, and then across into pieces convenient for you.
Advice! So that the cucumbers do not have bitterness, you can soak them in cold water for several hours. In this way, all the bitterness comes out quickly.
Place the slices in a bowl. Pour salt, sugar and seasoning there. We clean and squeeze the garlic through a special device, or you can use a fine grater.
Mix all ingredients thoroughly. Add vinegar and sunflower oil to the cucumbers. Mix the mixture well again and put in the refrigerator for 3 hours to marinate.
Now cucumbers can be safely eaten. To roll up such a snack for the winter, we do the same thing, put the mass in jars and sterilize for 15 minutes. We monitor the level of water in the pan, it should reach the "shoulders" of the cans. We take out the cans from the pan, and immediately proceed to seaming.
Korean cucumbers with carrots
- 1.5 kg of cucumbers;
- 150 grams of carrots;
- 1 heaped tablespoon of salt;
- 125 ml of vegetable oil;
- 125 ml 9% vinegar;
- ¼ packs of Korean carrot seasoning;
- ¼ cups of garlic;
- ¼ glasses of granulated sugar.
Cut the cucumbers into 4 pieces in length. Grate the carrots on a special Korean carrot grater. Combine cucumbers and carrots in one bowl, add all the other ingredients, crush garlic or three on a fine grater. Mix everything well and put it in the refrigerator for 24 hours, stir the mass several times. In a day, the cucumbers are ready to eat. To roll them up, repeat the same sequence as in the previous recipe.
